The night food market actually is more of a dusk market. I think it stays active until well into the dark mostly because of the tourists. Of course, in a tourist town, also the Lao stay up a bit longer. They say that in the less touristy areas, food markets close well before it is really dark and that it's hard to get any food by 8pm.
